摘 要:对食品化学设计性实验的特点、实施方法、考核方法和成绩评定以及教学效果等进行了阐述。实践证明,通过食品化学设计性实验教学,不仅提高了学生的实验操作水平和自主设计实验方案、查阅文献的科研能力,而且使学生巩固了其他课程的教学内容,较好的培养了学生的创新能力和研究开发能力,提高了学生的综合素质和团队合作意识。The designing experiments of food chemistry were introduced in detail.They consisted of the experimental traits,implementary methods,examination methods achievement evaluation,teaching effects,etc.The practices indicated that the designing experiments teaching can not only improve the students' level of experimental operation and scientific research ability of designing experimental scheme and consulting literature by themselves,but also consolidate the students teaching content of other courses,train the students creative ability and developing ability bitterly,and improve the students comprehensive qualities and team working consciousness.
