摘 要:目的:全面了解宿县地区大中专学校食堂的卫生状况,更好地加强监督管理。方法:对宿州市19所大中专学校43个食堂卫生状况进行现场调查和询问。结果:学校食堂内外环境普遍较差,“三防”设施不完善的占34.9%,无消毒保洁设施的占69.8%,从业人员素质差,食具及厨师双手检测总合格率为54.0%,食源性疾病漏报率为86.8%。结论:学校食堂存在严重的卫生问题,是食源性疾病的重大隐患,学校领导应加强食堂的卫生管理,卫生部门应加大监督执法力度。Objective: Understanding comprehensively the hygienic conditions of the dinning halls of advanced or secondary specialized schools in Snxian district to improve sanitary supetwsion and administration of them. Methods: A fiall survey was conducted in 43 dinning halls of 19 advanced or secondary specialized schools in Suxian district. Results: Poor hygienic conditions inside and outside the dinning halls were observed. Among the surveyed dinning halls, 34.09% did not possess efficient 'three defense' installations, 69. 8% were unable to provide sterilized and sanitary facilities.The quality of the emgloyees was poor, the total qualified rate of cook's hands and cookers was 54.0%, and 86.8% of food - borne diseases failed to declare. Conclusions: Poor hygienic conditions of the dinning halls might result in food - borne diseases, schools should improve the hygienic conditions of the dinning halls, and health administration departments should strengthen sanitary supervision.
