摘  要:将清茬曲、红心曲、后火曲3种大曲分别单独投入生产,并用混合曲作对照,严格按照汾酒现行酿造工艺进行生产试验,结果表明,混合曲能较好地兼顾3种曲的特点,清茬曲前火较猛、代谢旺盛,后火曲发酵酒醅酒精度略高,红心曲酿酒口感较好。Three kinds of Fenjiu Daqu including section clear starter,red core starter,section black starter were used in the production respectively with mixed Daqu used as contrast group.The results showed that mixed Daqu had successfully integrated the features of the three Fenjiu Daqu,the temperature of section clear starter rised rapidly at the earlier stage and the supersession vigorous,the fermenation of section black starter would result in high alcoholicity,and red core starter would produce liquor with good taste.(Tran.by YUE Yang)
