摘　　要：氢化油是油脂工业加工的一种产品,在食品生产中应用较为广泛。近年研究表明,氢化油中存在的反式脂肪酸对人类健康有很大的危害,引起了大众和科学家的广泛关注。综述了氢化油的加工目的、在食品工业中的应用、对人体健康的危害及减少氢化油危害的措施。The hydrogenated oil is a kind of product in oil industry,which has been broadly applied in food production.It has draw great attention from the scientists and the public because of the trans-fatty acids,which has been proved harmful to human health in recent research.Its processing purpose,main application,main hazards and control measures were summarized.
