摘  要:[目的]了解重庆市农村寄宿制学校食堂经营、供餐形式及学生膳食现状,为制定改善农村学生膳食营养的相关政策提供依据。[方法]采用分层二阶段整群抽样方法,对重庆市27所农村寄宿制学校食堂经营及供餐形式和3547名中学生膳食现状进行调查。[结果]27所寄宿学校只有5(18.52%)所学校早餐提供了主食+鸡蛋+牛奶+咸菜。午餐和晚餐都以主食+蔬菜+肉为主。近1个月寄宿学生的膳食摄入情况:有55.21%、34.93%和32.34%学生基本不吃蛋类、奶类和豆类。女生基本不吃肉、蛋、奶和豆类这4类食品的比例均高于男生。[结论]重庆市农村寄宿制学校食堂一日三餐的供餐形式以及学生膳食摄入结构都存在不合理的方面。学校早餐应该增加奶类、豆类、新鲜蔬菜的供应,学生应该增加豆类食品的摄入频率。[Objective]To know the status of eatery management and the form of school feeding of rural boarding middle school and diet status of students in Chongqing,to provide guidelines for making some policy measures in order to improve diet nutrition situation of rural students.[Methods]Adopting stratified two-stage cluster sampling method,we conducted a eatery management and school feeding for 27 rural boarding middle schools and a diet status for 3547 students in Chongqing.[Results]Only 5(18.52%)in 27 schools provided staple + eggs + milk + pickle food at breakfast.The main food at lunch and dinner were staple + vegetable + meat.Dietary intake of boarding students in nearly month was:the percentage of students no eating eggs,milk and legumes respectively were 55.21%、34.93% and 32.34%,respectively.The percentage of females no eating meat,eggs,milk and legumes were lower than that of males.[Conclusion]The form of school feeding and dietary intake structure of students of rural boarding middle school in Chongqing were unreasonable.More milk,legumes and fresh vegetables should be supplemented at breakfast by the schools,and more legumes food should be taken by students.
