摘  要:研究以在马铃薯淀粉生产过程中产生的马铃薯渣与汁水为原料,以短小芽孢杆菌ZY05为发酵菌种,优化马铃薯薯渣液态发酵生产单细胞蛋白饲料的工艺。初步确定了马铃薯薯渣与汁水发酵的适宜条件,具体为除菌种外不添加任何外源物质,pH自然,发酵温度为37℃,转数为180r·min-1,发酵时间为120h。通过本项工艺获得的马铃薯渣与汁水发酵产物中单细胞蛋白含量达到19.23%,氨基酸组成均衡,并且经大鼠急性毒理试验证明无毒,经小鼠采食量与增重试验证明均优于同等质量的豆粕。利用短小芽孢杆菌发酵马铃薯渣生产单细胞蛋白饲料具有良好的应用前景。In this study,the potato residues and juice from potato starch production were used as raw fermentation materials without any foreign substances and Bacillus pumilus were used as fermentation strains for the optimization of fermentation conditions of single cell protein production.When B.pumilus was inoculated and grown at 37 ℃ in a incubator with the shaking rate of 180 ·rmin-1 for 120 h without adjust pH,single cell protein amounted for 19.23% of total fermentation products.The contents of 20 kinds of protein amino acids were in balance.The fermentation products were verified to be non-toxic in a rat acute toxic test,and shown to be superior to the equivalent,mass of soybean meals in the mouse intake and weight increase tests.Therefore,the fermentation products containing the single cell protein from potato residues could be widely used for feed production in the future.
