摘  要:植酸酶是催化植酸及其盐类水解为肌醇与磷酸(盐)的一类酶的总称,属磷酸单酯水解酶。植酸酶由于能够降解饲料与食品中的植酸及其盐,成为近几年出现的新型饲料与食品添加剂。植酸酶产生菌的选育工作主要有自然筛选和诱变选育,因为诱变选育应用各种诱变选育方法促使遗传物质的结构发生改变,能够筛选具有较高酶活力或新的酶学性质的植酸酶产生菌,因而受到人们的关注和广泛研究。本文对近年来植酸酶的诱变筛选方法和植酸酶应用两方面的内容进行综述。Phytase is the general term for a class of enzymes of catalysis phytic acid and its salts to inositol and phosphoric acid(salt),and it is a phosphate monoester hydrolases.Due to its function of degrading phytic acid and its salt in food and feed,phytase has become a new type of feed and food additives in recent years.The selection of phytase producing strain mainly focuses on natural selection and mutation breeding,because the application of mutation breeding to urge changes in the structure of genetic material can be screened with high enzyme activity or new enzymatic properties of phytase producing bacteria,and thus it is paid more attention by people to and extensive researches have been done.In this paper,the mutation screening methods and phytase applications are reviewed in recent years.
