摘  要:以福建和浙江两个产地的无患子为原料,对其油脂的主要理化性质、甘三酯组成、VE含量和氧化稳定性进行了研究。结果表明:两个产地的无患子油中不饱和脂肪酸含量均达到80%以上,其中,主要组分油酸(O,C18∶1)在50%以上,二十碳一烯酸(Ei,C20∶1)在21%以上,花生酸(Ar,C20∶0)7%左右,亚油酸(L,C18∶2)7%左右,棕榈酸(P,C16∶0)在5%以上;采用胰脂酶水解分析油脂Sn-2位脂肪酸组成分布,可计算出其主要的甘三酯为EiOO、OOO、EiOEi、OOAr、EiOAr;无患子油中VE含量较高,其中来自福建的油中VE含量为26.30 mg/100 g(γ-VE占20.78 mg/100 g),来自浙江的油中VE含量为30.70 mg/100 g(γ-VE占24.26 mg/100 g);两个产地的无患子油氧化稳定性均较好。Sapindus mukorossi Gaetrh. seed from Fujian and Zhejiang Province were selected as materials, and the physicoehemicd characteristics ,triacylglycerol (TAG) composition, VE content, and oxidative stability of SaPindus mukorossi Gaetrh. seed oil(SMSO) were investigated. The results showed that both the SMSO were rich in unsaturated fatty acids ( 〉 80% ) ; and major fatty acids of them were : oleic acid ( O, C18: 1 ) above 50% , eicosanoic acid (Ei, C20:1 ) above 21%, arachidie acid (Ar, C20:0) about 7%, linoleic acid (L, C18: 2) about 7%, palmitic acid ( P, C16:0) above 5%. The fatty acid composition of the 2 - position of triacylglycerol was analyzed by the method of pancreatic lipase hydrolysis, and the mainly TAGs were EiOO, OOO, EiOEi, OOAr, EiOAr. For SMSO from Fujian, the content of VE was 26.30 mg/ 100 g (γ-VE,20.78 mg/100 g) ; for that from Zhejiang,the content of VE was 30.70 mg/100 g (γ- VE ,24.26 mg/100 g). The oxidative stability of both oils were very good.
