摘 要:目的:了解鄂州市食品中金属污染状况,进行风险预警。方法:按照"2010年国家食品安全风险监测计划"的要求,采用原子吸收光谱法、原子荧光光谱法、分光光度法对我市各超市及农贸市场等各类食品中铅、镉、汞、铝四种金属元素进行分析。结果:全年共采集各类食品264份,其中对219份样品进行了铅、镉、汞含量的监测,其超标率分别为4.57%、2.74%、0.92%,检测铝含量的样品45份,超标19份,超标率42.22%。结论:鄂州市食品中铅、镉、汞的污染水平总体较低,铝的污染比较严重的,应采取针对性措施,以提高食品安全性。Objective:In order to understand the metal contamination levels in food in Ezhou city.Methods: According to "2010 national food safety risk monitoring plan",analysis of lead,cadmium,mercury,aluminum in foods from supermarkets and farmers markets in our city by atomic absorption spectrometry,atomic fluorescence spectrometry and spectrophotometry was fulfilled.Results: 255 types of food were collected,of which 210 samples were detected for lead,cadmium,mercury monitoring,the over-limit rate were 4.76%,2.86%,0.95%,respectively and for aluminum in foods,the over-limit rate was 42.22%.Conclusion: The lead,cadmium,mercury pollution levels in Ezhou food were generally lower,but aluminum pollution level was higher,so measures should be taken to assure food security.
