摘 要:以大豆分离蛋白为原料,用7种不同的蛋白酶对其进行水解,得到大豆肽,在水解不同时间时测定大豆肽的血管紧张素转换酶(ACE)抑制率和胃癌细胞生长抑制率。结果表明,碱性蛋白酶制备的大豆肽ACE抑制率最高,其制备大豆降血压活性肽的最优条件为:反应温度55℃,pH 9.0,底物质量分数8%,酶添加量8 000 U/g,酶解时间5 h。木瓜蛋白酶制备的大豆肽胃癌细胞生长抑制率最高,其制备大豆抗癌活性肽的最优条件为:酶解温度55℃,酶添加量7 000 U/g,pH 7.5,底物质量分数6%,酶解时间4 h。The soybean protein isolate was treated by seven kinds of proteases to obtain soybean peptides. At different time of treating process, the ACE inhibitory activity and gastric cancer cell growth inhibitory activity of the soybean peptide were detected. The results showed that soybean peptide made by Alcalase had the highest ACE inhibitory activity, and its optimal preparation conditions were: reaction temperature 55℃, pH 9.0, substrate concentration 8%, Alcalase dosage 8 000 U/g, time 5 h. Soybean peptide made by papain had the highest gastric cancer cell growth inhibitory, and its optimal preparation conditions were : temperature 55 ℃, papain dosage 7 000 U/g, pH 7.5, substrate concentration 6%, time 4 h.
