摘　　要：食物成分的复杂性使食物对癌症的发生、发展具有促进和抑制的双重作用。因此,研究食物与营养因素在这一过程中的作用机制,有利于发挥食物对人体的有益作用。本文就食物、营养与食管癌之间关系的研究进展进行简要综述,指出研究中存在的局限性及发展前景。Owing to its complicated components, food has dual effects of both enhancement and inhibition on occurrence and development of cancer. Therefore, it is necessary to study the mechanism of food and nutrition in the etiology and pathogenesis of cancer, which may be helpful to exert its beneficial role in human health. This review summarizes the research progress in relationship of food and nutrition with the esophageal cancer, and it reveals the limitations of previous researches, as well as suggests the prospect in this field.
