摘  要:以红麻花为原料,在单因素试验的基础上,设计正交试验进行色素提取工艺的优化研究,得出最佳提取条件为:在55℃下,以丙酮为提取剂,料液比为1:40(g/ml),恒温浸提6 h。同时研究温度、pH值、自然光照、氧化剂、还原剂和金属离子对色素稳定性的影响,结果表明,红麻花色素在90℃以下热稳定性良好;pH对色素的影响明显,在强酸下稳定性较好;具有良好的抗还原性和一定的抗氧化性;金属离子Ca2+、Mg2+对色素影响不大,Cu2+、Al3+、Na+、K+对色素有一定的降解作用。This study aimed to find out the optimum extraction conditions of yellow pigment of ambary by a single factor orthogonal experiment, the optimum extraction conditions were 55℃, 1:40 of material to acetone (g/ml) and 6 h. The effects of some influential factors including temperature,pH, light,oxidant, Vc and metallic ions on the stability of the yellow pigment were also experimented.The results showed that the yellow pigment had a good stability below 90℃ or under a strong acid condition, pH had a significant effect on its stability, the yellow pigment also had a good resistance to Vc and a certain resistance to oxidant. The metallic ions such as Ca^2+,Mg^2+ had little effect on the yellow pigment, but these metallic ions such as Cu^2+、Al^3+、Na^+、K^+ could, in some extent, degrade the yellow pigment.
