摘  要:本文对产自香格里拉的鲜"奶渣"和发酵"奶渣"中的乳酸菌进行分离鉴定。结果表明,从鲜"奶渣"中分离到27株乳酸菌,并鉴定出7种(亚种),其中德氏乳杆菌、麦芽香乳杆菌、发酵乳杆菌和乳酸乳球菌4种菌被确定是鲜"奶渣"中的优势种群。从发酵"奶渣"中分离到40株乳酸菌,并鉴定出9个种(亚种),其中德氏乳杆菌、麦芽香乳杆菌、发酵乳杆菌、嗜酸乳杆菌和乳酸乳球菌5种菌被确定是发酵"奶渣"中的优势种群。In this paper,the lactobacillus were isolated and identified from fresh Yak milk dregs and fermented Yak milk dregs.The results indicted that 27 strains lactobacillus were isolated from fresh Yak milk dregs,and they had been identified as 7 differential species.Of which,L.delbrueckii,L.maltaromicus,L.fermentum and L.lactis were the predominant microorganisms of all isolated lactobaciIlus.While,40 strains lactobacillus were isolated from fermented Yak milk dregs,and they had been identified as 9 differential species.Of which,L.delbrueckii,L.maltaromicus,L.fermentum,L acidophilus and L.lactis were the predominant microorganisms of all isolated lactobaciIlus.
