摘　　要：就改性淀粉的种类及其特点与富含改性淀粉稻米产品改良及改性淀粉的应用趋势研究进展作了简要综述,以期为开发与研制新型功能食品及新领域提供思路。This paper briefly reviewed the progress of the classification and its trait of modified starch and the improvement of rice products containing high modified starch content,which will provide the new way to develop and prepare the new functional food and other application.
