市售谷类为主的代乳品营养成分分析

摘  要:目的: 了解市售七种谷类为主的代乳品的营养成分含量。方法: 水分采用重量法, 蛋白质用凯氏微量定氮法,碳水化合物用氧化法,钙用滴定法, 磷、铁用比色法。结果:蛋白质含量仅为卫生部部颁代乳品标准低限值的34~60% 左右,脂肪含量为部颁标准低限值的10~20% , 碳水化合物、水分含量高于部颁标准高限值, 钙、磷、铁含量不同程度的偏低。结论: 市售七种谷类为主的代乳品不能作为代乳品, 只能作婴儿辅食, 否则会造成蛋白质-热能营养不良, 危害儿童体格。Objective:To undersand the nutrition composition of seven grain based milk substitutes on market.Method:Moisture content measurement by weight method,protein measurement by Micro Kjeldahl alalysis,carbohydrate by oxidize method,calcium content by titration and phosphorus and iron by colorimetric analysis.Results:The protein contents of seven grain based milk substitutes only reach the level of 34~60% of the minimum value and the fat content reach the level of 10~20% of the minimum value of the national criteria for milk substitute issued by Chinese ministry of public health.While the moisture and carbohydrate content are higher than the maximum value of that criteria.In addition,there is varied deficiency of calcium,phosphorus and iron according to the national criteria.Conclusion:These seven grain based milk substitutes on market can not be used as main milk substitutes.It could only be took as subsidiary for infants,and otherwise it will lead to malnutrition in protein and calorie which are harmful to the physical and mental development of infants.
