摘  要:对不同浓度的乙醇-水溶液体系,白酒组成成分中基酒、乙醇、加浆水、酸、酯及其混合物等因素对白酒溶液电导率的影响进行了系统研究,并对比了沉淀酒样与成品酒样的电导率。结果表明,随着乙醇浓度的增加,其电导率呈现下降趋势,同时酒中的酸、酯及温度对白酒电导率产生一定影响,其中乙酸影响比较显著。另外,还发现沉淀酒样与成品酒样电导率存在较大差异,经分析表明,电导率可用于白酒事故的异常分析,并可作为一个重要指标来指导白酒生产,为白酒的质量控制提供科学依据。The effects of alcohol-water solution system of different concentration, and liquor compositions such as base liquor, alcohol, serofluid, acids, esters, and their mixture etc. on the electrical conductivity of liquor were studied systematically and the conductivity of precipitate liquor samples and product liquor samples was compared. The results showed that liquor conductivity dropped with the increase of ethanol concentra- tion, acids and esters in liquor and the temperature would influence liquor conductivity and acids had the most significant effects, there was great difference in the conductivity between precipitate liquor samples and product liquor samples, accordingly, electrical conductivity could be used as abnormal analysis indicator for liquor production accident and also an important indicator to guide liquor production and for liquor quality control.
