摘　　要：葛根淀粉具有一系列特殊的性质，本文通过对葛根淀粉特性和现阶段国内外对葛粉开发利用的情况进行了概述，探讨了国内相关研究所存在的问题。并在此基础上，对葛根淀粉研究的发展方向进行了展望，拟为国内葛根淀粉的工业化生产研究做进一步的探索奠定基础。In this article the properties of pueraria starch and its development and utilization were summarized Based on the analysis of domestic research, the development direction of starch was prospected, which provided the basis for further study on domestic pueraia starch industrilization.
