摘  要:[目的]查找引起本次食物中毒暴发的食品和病原微生物。[方法]开展个案调查寻找可疑的中毒食物和餐次并通过病例对照研究方法确定中毒食物,采集标本送往实验室进行相关致病微生物分离和鉴定。[结果]个案调查发现,2月26晚餐为可疑餐次,通过病例对照研究发现,以红油猪心为暴露因素其OR值达到132.00,其95%的可信区间为16.66~1537.46,说明吃红油猪心引起食物中毒的危险性是不吃红油猪心的16.66~1537.46倍。红油猪心制作过程不符合卫生学标准。从采集到的部分标本中分离到弗劳地枸橼酸杆菌,而且8位患者的双份血清的弗劳地枸橼酸杆菌抗体凝集试验呈4倍增长。所有标本中未检出其他相关病源微生物。[结论]这是一起通过红油猪心传播弗劳地枸橼酸杆菌而引起的食物中毒暴发。[Objective]To find out the food and pathogenic microorganism leading to the outbreak of food poisoning.[Methods]Case investigation and case control study were used to find out the doubtful poisoning food and mealtime,samples were send to laboratory to isolate and identify pathogenic microorganism.[Results]Case investigation results suggested that the dinner on February 26th was the time for the food poisoning.By case control study,we found that the OR value of the exposed factor for pig heart with red camphor oil was 132.00,and the 95% confidence interval was at the range of 16.66-1537.46.We also found that the manufacturing process did not conform to the hygienic standard.C.aerogenes was found in some of the collected samples,the anti-body against to C.aerogenes in patient was 4 times increase in agglutination test,and no other related pathogenic microorganism was found.[Conclusion]This food poisoning outbreak was cause by C.aerogenes transmitted through eating pig heart with red camphor oil.
