摘　　要：本文介绍了乳及乳制品中皮革水解蛋白的几种检测方法,主要包括比色法、氨基酸自动分析仪测定法、高效液相色谱法、高效液相色谱-质谱联用法、毛细管电泳法,并对各种方法的原理及其研究情况进行了详细阐述。This article introduced several detection methods of leather-hydrolyzed protein,including colorimetry, automatic amino acid analyzer,high performance liquid chromatography （HPLC）,high performance liquid chromatography mass spectrometry （HPLC-MS）,capillary electrophoresis,and the principle and research situation of each methods were explained in detail.
