摘 要:目的了解餐饮业冰箱(-1~10℃)与冰柜(-1~18℃)卫生状况。方法随机抽查部分餐饮业正常使用的冰箱冰柜,现场记录其消毒情况,并采用大肠菌群食(饮)具快速检测纸片,对冰箱冰柜检测。结果 2009年调查126户餐饮业55台冰箱,113台冰柜,消毒记录分别是56.36%、54.86%,大肠菌群检测合格率分别是30.90%、37.16%;2010年调查119户餐饮业44台冰箱,106台冰柜,消毒记录分别是61.36%、54.71%,大肠菌群检测合格率分别是36.36%、51.88%。结论部分餐饮单位冰箱冰柜卫生状况不良,应加强监管,防止冰箱冰柜污染造成的食源性疾病。Objective In order to understand the sanitary conditions of refrigerator(-1-10℃)and freezer(-1-18℃)as a kind of anticorrosive facility in catering enterprises.Method We conducted an investigation randomly at Baohe distinct,using coliform test paper and recorded the disinfection situation of table wares at the same time.Result: By the survey of 55 refrigerators and 113 freezers in 126 restaurants 2009,disinfection records were 56.36%,540.86%;coliform detection qualified rate respectively was 30.90%,37.16%.By the survey of 44 refrigerators and 106 freezers in 119 restaurants 2010,disinfection records were 61.36%,54.71%;coliform detection qualified rate respectively was 36.36%,51.88%.Conclusion To improve food safety situation of catering enterprises level,we should strengthen the supervision of disinfection situation in refrigerators and freezers to prevent food origin diseases caused by the refrigerator and freezer pollution.
