摘 要:目的了解广州市医学生的膳食结构和营养状况,为指导合理膳食提供理论依据。方法采用24 h膳食回顾法,对广州市某高校461名医学生进行膳食调查。结果男、女生水果与奶类摄入量,女生谷类摄入量和男生蔬菜摄入量偏低,蛋白质、脂类、尼克酸、抗坏血酸、铁和磷基本能满足人体需要,但能量、膳食纤维、钙、维生素A、硫胺素和核黄素的摄入量不足,钙磷比例偏低。男、女生每日三餐能量分布不平衡,早餐能量摄入量偏低,晚餐能量摄入量偏高,膳食结构不合理。结论医学生膳食结构及营养水平存在较多问题,学校应该有针对性地开展内容广泛的营养健康教育。Objective The purpose of the study was to understand the dietary structures and nutritional status,and to provide a theoretical basis for college medical students to guide a reasonable diet.Methods A total of 461 medical students were investigated using a 24-hour dietary recalling.Results Dietary patterns of medical students were consistent with that of Chinese residents,intake of foods rich in species.The intakes of fruitages and milk for both boys and girls,the intakes of grain foods for girls and the intakes of vegetables for boys were lower than the dietary reference intakes.The intakes of protein,fat,niacin and ascorbic acid were basically abundant,however,intake of energy,meal fiber,calcium,vitamin A,thiamine and riboflavin were not abundant.Intake of iron and phosphorus was higher than normal requirements.The quantity of heat assignment configuration for boys and girls were out of balance,the energy intakes of breakfast were lower than the dietary reference intakes,but the energy intakes of dinner were higher.The structure of diet was also irrational.Conclusion There are still many problems in dietary patterns and nutrition status of medical students,the school should be targeted to carry out a wide range of health education.
