摘  要:研究了桃金娘色素的稳定性和理化性质,并对其进行了初步分离纯化,为桃金娘色素的推广应用提供理论基础。研究结果表明,桃金娘色素易溶于酸性水溶液、酸性醇溶剂,不溶或难溶于非极性溶剂;在溶液pH小于4.0时桃金娘色素对光、热有较好的稳定性,其最大吸收波长为516nm;耐强氧化剂和还原剂较差;Zn2+、K+、Al3+、Na+、Ca2+离子对桃金娘色素有不同程度的保护和增色作用,但Mg2+、Fe3+离子降低色素的稳定性。经过葡聚糖凝胶LH-20柱层析和高效液相色谱分离纯化,表明桃金娘色素主要由4种色素组成。In order to provide theory and experimental data for the popularization and application of Rhodomyrtus tomentosa pigment(RTP),the stability and separation of RTP was investigated.The results indicated that,this pigment was easily dissolved in acidic aqueous solution or acid alcohol solvent,insoluble or hardly soluble in non-polar solvents.In the buffer solution,RTP was stable when the solution pH value was lower than 4.0,the maximum absorption wavelength of RTP was 516nm.It was found that the red pigment resistant to common food additives,such as carbohydrate,organic acid,sodium benzoate,potassium sorbate.The pigment was poor resistant to light,heat,reduct,oxide.It was stable to metal ions such as:Zn2+,K+,Al3+,Na+,Ca2+,which could add its color or could not badly affect it while Mg2+,Fe3+ could change its color.HPLC showed that there were four main pigments in RTP.
