摘 要:研究0.02 mm和0.06 mm聚乙烯袋包装、(0±0.5)℃条件下冷藏18d对结球生菜品质的影响。结果表明,随着冷藏时间延长,失重率逐渐增高,VC、可溶性糖、可溶性蛋白等营养成分含量逐渐降低。0.06mm聚乙烯袋包装的结球生菜冷藏效果好于0.02mm聚乙烯袋包装的结球生菜,冷藏18d后0.06mm聚乙烯袋包装的结球生菜感官评价为3.4,失重率为2.15%,VC含量为25.9mg/100g,可溶性糖含量为1.22%,可溶性蛋白为53mg/100g。The effect were studied,of 0.02 mm and 0.06 mm polyethylene(PE) bag packages on the quality of lettuce during 18 days cold storage at 0±0.5 ℃.The results showed that weight loss increased and the contents of VC,soluble sugar and soluble protein decreased gradually as the extending of storage time.The quality of lettuce packed with 0.06 mm PE film was better than that packed with 0.02 mm PE bag.Sensory evaluation,weight loss,the contents of VC,soluble sugar and soluble protein of lettuce packed with 0.06 mm PE bag after 18 d of storage were 3.4,2.15%,25.9 mg/100 g,1.22% and 53mg/100g,respectively.
