摘　　要：目的:对嗜酸乳杆菌冻干菌粉的工艺进行研究,提高菌粉的活菌存活率。方法:通过测定沉淀质量,得到离心的最佳条件。通过测定活菌存活率,得到菌体冷冻干燥的保护剂配方。结果:最佳离心条件为:7000 rad/min,10min;最佳冷冻干燥保护剂配方为:蔗糖4%+甘露醇1%+L-cys 0.1%+Vc 0.1%,存活率达到72.15%。结论:对冻干菌粉的工艺进行优化,提高了活菌存活率,为冻干菌粉的利用打下基础。Objective： Study on the technology of Lactobacillus acidophilus freeze - dried powder. Advance survival rate of living bacteria. Methods： The best condition of centrifugation through the way to measure mass of precipitation. According to measure sur- vival rate of Lactobacillus acidophilus,getting the best protective agent prescription of freeze drying. Results： The best centrifugal con- dition is 7000 tad/rain, 10 min; the best protectants formula： four percent of cane sugar, one percent of mannitol, naught point one percent of L - eys, naught point one percent of Vc, survival rate reached to 72.15%. Conclusion ： It advanced survival rate though optimized technology of freeze - dried powder. , and lay foundations for use of Lactobacillus acidophilus freeze - dried powder.
