摘 要:综述了牡丹花色素的提取工艺及纯化方法,包括溶剂萃取法、超临界流体萃取法、酶提取法、超声波辅助萃取法和微波辅助萃取法;纯化方法主要采用柱层析法、膜分离法、高速逆流色谱法和重结晶法。牡丹花色素属于类黄酮化合物,主要有花色苷、黄酮和黄酮醇的苷类。然后对牡丹花色素光谱特性、溶解性、耐光性、耐氧化性、耐还原性及pH和金属离子对色素显色特性等理化性质进行阐述。最后提出牡丹花色素研究中存在的问题及发展方向。The primary extraction and purification methods of peony pigment were elaborated including:solvent extraction,supercritical fluid extraction,enzyme extraction,ultrasonic wave assisted extraction,microwave assisted extraction.Purification process mainly adopts column chromatography,membrane separation,high-speed countercurrent chromatography and recrystallization.Peony pigments were flavonodids,mainly anthocyanins,flavonoids and flavonol glycosides.Then,the spectrum,solubility,resistance to light,resistance oxidation,resistance reducing and pH value and metal ion pigment show color characteristics such as physical and chemical properties of peony pigment were also summarized.Finally,the problems and future trends in research of peony pigments were proposed.
