摘 要:对菊叶薯蓣预发酵清洁化生产工艺进行了优化研究,对预发酵过程中的发酵温度、pH、酵母接种量在单因素实验的基础上进行了正交实验优化,得到最佳发酵条件为发酵温度35℃、pH5.0、酵母接种量0.2%,根据优化条件进行验证实验,总糖消耗率与淀粉利用率分别为81.48%和62.44%,薯蓣皂甙元得率较传统直接酸水解法提高了5.9%,酸解废水体积减少了56.42%,废水中COD、BOD、TOC分别降低79.90%、98.99%与86.83%。The fermentation conditions in process of clean production from dioscorea camposita were studied,including fermentation temperature,initial pH value and active dry yeast.Through orthogonal experiment,the optimal conditions were determinred:35 ℃,initial pH of 5.0,active dry yeast of 0.2%,with the optimized conditions the carbohydrate consumption rate was 81.48%,and the starch utilization rate could be 62.44%.Compared with the traditional process,diosgenin yield increased by 5.9%,and the removal rate of waste water volume,COD,BOD,TOC in the waste water treated were 56.42%,79.90%,98.99%,86.83% respectively.
