摘 要:通过实验分析我国鲆鲽鱼中铅的残留量,对居民膳食的鲆鲽鱼中铅的暴露量进行膳食健康初步评估。从市场上随机购买大菱鲆、牙鲆和半滑舌鳎,分别测定鱼肉、鱼皮和内脏中铅的含量,并结合我国鲆鲽鱼的消费量以及我国居民的膳食量进行分析。结果表明,基于鲆鲽鱼铅的残留量,我国居民人均的鲆鲽鱼铅膳食暴露量小于鲆鲽鱼铅每人每天允许摄入量的推导值,在正常取食情况下不存在安全风险,我国城市地区比农村地区的食用安全风险略大。By experimental analysis of the residues of Pb in the flatfish, we aimed to assess the dietary exposure of Pb when residents consume flatfish in China. Flatfish, including turbot, paralichthys olivaceus and cynoglossus semilaevis Gunther from market were selected randomly, and Pb residues were assayed separately in fish skin, meat and viscera. Then,the flatfish consumption in China was analyzed. Based on the residues of Pb in flatfish, it was concluded that the Pb exposure levels of flatfish per capita in the dietary of our residents was less than the Pb tolerance dose for each person every day theoretically. There is no safety risk in normal consumption. However, the flatfish consumption in urban areas is more risky than that in rural areas.
