摘 要:为提高食品冻干设备中物料托盘的传热性能和安全性,在BSNFD05冻干机上设计了三种物料托盘:不锈钢网状托盘、铝制平板托盘和不锈钢平板托盘,分别进行了传热计算和实验对比。结果显示,采用不锈钢网状物料托盘可以消除食品安全的顾虑,并提高辐射传热效率,其传热效率远远超过不锈钢平板托盘,达到铝制平板托盘相近的水平。The impacts of the structures and materials of the supporting trays on the efficiency of vacuum freeze-drying of different food species were experimentally studied. Three types of the supporting trays,stainless steel meshed trays, aluminum plate trays,and stainless steel flat trays, were designed and tested in vacuum freeze-drying of sweet corn. The results show that the stainless-steel meshed trays outperform both the aluminum plate trays, and stainless steel flat trays. For instance, its advantages over the other two types of trays include reduction of food safety risk and enhancement of radiation heat transfer efficiency. In addition, the heat conductance of the stainless steel meshed tray was found to be much higher than that of the stainless-steel tray, and close to that of the aluminum flat tray.
