摘  要:根据Box-Behnken中心组合试验设计原理,在单因素试验的基础上,采用响应面分析法,建立了生产高不饱和脂肪酸大豆油脂的二次多项数学模型,并以产出大豆油脂的碘值为响应值做响应面和等高线,考察了结晶时间、结晶温度、回调时间和回调温度对不饱和脂肪酸含量的影响。通过自制的油脂结晶器,制得富含高不饱和脂肪酸的大豆油脂。得出最佳工艺参数为:降温速度5℃/h,结晶温度-15℃,结晶时间24h,搅拌速度20rpm。利用温度回调至-5℃的方法,使所得油脂产品高不饱和脂肪酸含量达到86.41%。According to Box-Behnken central composite experimental design principles, and based on the single-factor test, the mathematical model for producing high-unsaturated fatty acids soybean oil was estab- lished by response surface methodology, while the influences of crystallization time, crystallization tempera- ture, the callback time and the callback temperature on unsaturated fatty acids content in soybean oil were in- vestigated by using the soybean oil iodine value as the response surface contour. With homemade grease facili- ty in producing unsaturated fatty acids soybean oil, we found the following optimum parameters: the cooling rate of 5℃/h, the crystallization temperature of -15℃, crystallization time 24 h, stirring speed of 20 rpm. Call- back temperature to -5℃, enable produce 86.4% of high unsaturated fatty acid content in grease products.
