摘 要:为优化电导率法快速测定小麦中灰分的条件,选择河南产地小麦为样品,研究了超声波处理样品的温度、时间、样品粒度、料液比和pH等因素对小麦提取液电导率值的影响,并对同一品种不同贮藏时间和产地的小麦灰分含量与电导率间的关系进行了分析.在单因素试验基础上,用响应曲面法对影响电导率测定的3个主要因素进行了优化,建立了相应的数学模型.结果表明:响应曲面优化提取小麦粉的最佳条件为超声温度49℃±1℃,超声时间3.55 h,料液比1 g∶400 mL,灰分与小麦储藏时间关系曲线二次方程的相关系数为0.762 2,产地和灰分之间相关系数为0.903 0.With the purpose of optimizing condition to rapid determination in wheat ash,we select wheat from Henan Province as sample, study on the effects of ultrasonic temperature, ultrasonic time, ratio of solid material to liquid solution and pH value of solution on determination result of solution conductivity with the samples extracted by ultrasonic. At the same time,we study on the relations between ash and conductivity of wheat from different areas and with different storage times separately. Based on the single factor experiments, the effects of different factors on determination of solution conductivity were optimized with Response Surface Methodology, and appropriate mathematical models have been established. The results showed that the optimum technological conditions by response surface methodology are ultrasonic temperature 49℃±1℃, ultrasonic time 3.55 h and the ratio of solid material to solution lg:400 mL. The correlation coefficient was 0.762 2 to quadratic equation of relationship curve between ash and storage times. The correlation coefficient was 0.903 0 between area and ash.
