摘  要:姜黄素是姜黄的主要化学成分之一,具有抗氧化、抗肿瘤和抗菌等生物活性,在食品工业、医药工业有广阔的应用前景。然而,溶解性和稳定性差以及生物利用度低限制了姜黄素的应用。新剂型和新高分子材料的开发为姜黄素的改性奠定了基础,高分子材料在改善姜黄素水溶性和稳定性,调节释放速率,提高生物利用度等方面起到了非常重要的作用。本文综述了聚乙二醇类、聚乙烯吡咯烷酮类、聚氧乙烯类聚乳酸类、卡波姆、聚氰基丙烯酸酯、环糊精及其衍生物、壳聚糖及其衍生物、淀粉以及蛋白质类高分子材料在姜黄素改性中的应用,不同高分子材料在改善姜黄素性能方面的作用是不同的。对应用中可能存在的问题进行了概述。药用高分子材料的加入改善了姜黄素的性能,拓宽了姜黄素的应用领域。Curcumin is one of the main components of turmeric, and has antioxidant, antitumor and antibacterial activity. Curcumin has widely prospect usage in medical industry and food industry. However, the application of curcumin is limited due to poor solubility in water, poor stability and low bioavailability. New formulations and polymers application in curcumin estabhshed foundation for curcumin modifying. Polymers play important roles for increasing solubility and stability, regulating the release rate and improving the bioavailability. Research advances of polymers, such as polyethylene glycols, polyvinylpyrrolidone, polyoxyethylene, polylactic acid, carbomer, polybutycyanocrylate, cyclo- dextrin and its derivatives, chitin and its derivatives, starch and protein were reviewed. Different polymers play different roles. The problems that may have in the practical application were summarized. Pharmaceutical polymers improve the properties and widen the application fields of curcumin.
