摘　　要：分析了野生鸡■菌(Termitomyces albuminosus)的可消化蛋白质含量、氨基酸组成和水溶性多糖含量。研究结果显示,除赖氨酸外,它含有理想水平的所有人体必需氨基酸,尤其是含硫的人体必需氨基酸,并含有14.3％的水溶性多糖。The digestible protein content, amino acid composition and water-soluble polysacchande content of wild T. albuminosus were analysed. The results indicated that T. albuminosus contained all essential ammo acids, especially sulfur-containing essential amino acids except lysine at reasonable level and 14. 3% water-soluble polysaccharide.
