摘  要:本文对集体化时期山西农民的食品消费生活进行了考察,研究表明集体化时期山西农民的食品消费恩格尔系数居高不下,属绝对贫困型,食品消费支出增长缓慢,消费结构属以粮食为主要能量来源的主食型消费,营养水平低。食品生产、分配、流通中均强调国家、集体利益,农民的个人利益长期得不到重视,使山西农民生活水平无法得到提高。Some research has been given on the food consumption of Shanxi peasants in the collectivization period, which shows that the standard of living of Shanxi peasants, in terms of Engel Coefficient, belonged to the pattern of utterly poverty. The expenditure of food consumption was growing up slowly. The food composition remained with staple pattern regarding the food stuff as main source, in low nutrition level. During the links of food manufacture, food distribution, and food circulation much concentration was paid on the interests of States or Collective, instead, the one of peasant themselves was ignored, which caused the standard of living of Shanxi peasants hard to rise up.
