摘　　要：介绍了HACCP体系及其在肉制品中的应用现状,并阐述了HACCP质量管理体系在冷却肉生产加工过程中的应用。This paper introduced the HACCP system and its application status in meat product,and then expounded the application of HACCP quality management system in the processing of chilled pork.
