摘  要:以蜜环菌固态发酵物为原料制得一种蜜环菌饮料。以蜜环菌固态发酵物为原料,提取其中的多糖等营养和药效成分,进行风味调配,通过正交试验和感官评价的方法确定蜜环菌饮料的配方。该发酵饮料的培养基配方为:白砂糖1.5%,大米80%,黄豆1%,麸皮10%,红薯7.5%;饮料配方为:蜜环菌发酵液添加比例为30%、白砂糖为20 g/L、柠檬酸0.6 g/L、黄原胶0.2 g/L,测得成品饮料中各成分的含量为:多糖0.049 mg/mL,还原糖0.042 mg/mL,蛋白质53.0 mg/mL,氨基酸1.226 mg/mL。饮料的感官指标、理化指标和微生物指标均达国家标准。Study on the method using solid fermentation as raw material for health beverage. Armillaria mellea fermentation solid was used as raw material to extract the polysaccharide and other nutritional and medicinal compo- nents. After flavor adjustment, the optimum formula of the beverage of armillaria was determined through orthogonal test and sensory evaluation method. The optimizing solid fermentation medium for Armillaria mellea contained sugar 1.5% ,rice 80% ,soybean 1% ,bran 10% ,sweet potato 7.5%. The best formula for beverage was as follows: 30% armillaria fermented liquid, 20 g/L sugar, 0.6 g/L citric acid, and 0.2 g/L xanthan gum. The ingredients of the fin- ished product drink were as follows: 0. 049 mg/mL polysaccharide, 0. 042 mg/mL reducing sugar, 53.0 mg/mL pro- tein, and 1. 226 mg/mL amino acid. The senses index, physical and chemical indexes and microbiology indicators of drink have reached national standards. The Armillaria mellea beverage has unique taste and function for health care, it has great value in utilization.
