摘　　要：本文利用正交试验法对酵母细胞中蔗糖酶的提取条件进行了研究。确定了不需冰冻离心机就可进行的酵母蔗糖酶粗酶液的提取条件:16℃下,活化酵母∶蒸馏水=1∶8,放置8h,取上清液。并在此基础上,确定了酵母蔗糖酶粗酶液的制备过程。The extractive conditions of invertase were studied through orthogonal design experiment.The optimized ex-tractive condition as follows：activated yeast ceils were mixed with eight times distilled water at 16℃ for 8h. Under such condition, the invertase could be obtained without using frozen centrifuge. Then, on this basis, the method for preparation of crude yeast invertase was established.
