摘  要:【目的】对塔什库尔干羊、多浪羊与萨福克羊三元杂交羔羊肉的氨基酸成分进行系统分析并与其他几个品种进行比较,为评价羊肉品质及其氨基酸含量提供理论依据,为进一步开发羊肉的食用发展提供参考。【方法】采用GB/T 5009.124-2003法对塔多萨杂种羔羊羊肉进行氨基酸测定,并对几个区内、区外品种羊肉氨基酸种类及含量进行统计学比较分析。【结果】塔多萨杂种羔羊、多浪羊、托克逊黑羊、柯尔克孜羊、藏羊、小尾寒羊羊肉的17种氨基酸种类齐全、含量丰富,必须氨基酸含量占总氨基酸含量的比例分别为50.94%、48.05%、45.58%、43.28%、50.23%和49.94%,必须氨基酸含量高低依次为塔多萨羊>藏羊>小尾寒羊>多浪羊>托克逊羊>柯尔克孜羊。【结论】羊肉中富含人体所需要8种必需氨基酸(Thr,Val,Met,Ile,Leu,Phe,Lye,His,Ary),尤其是蛋氨酸、赖氨酸含量分别达到0.67和1.60%/100 g,可作为人类主要的氨基酸来源。[ Objective ] The amino acid composition of lamb was analyzed by systematic analysis and com- pared with several other species in order to provide a theoretical basis for the evaluation of lamb quality and a- mino acid content and a reference for the further development of improving the consumption of mutton. [ Meth- od ] The contents of amino acids of each group were analyzed by statistical comparative analysis. [ Result ] The results show that the 17 kinds of amino acids detected in Duotasa sheep, Duolang sheep, Tuokesun sheep, Kirghiz sheep, Tibetan sheep, Xiaoweihan sheep are abundant, containing full range of amino acids, and the proportion of EAA in the total amino acid are 50.94% ,48.05% ,45.58% ,43.28% ,50.23% ,49.94%. The following is the order of the levels of EAA in the lambs : Duotasa 〉 Duolang 〉 Tuokesun 〉 Kirghiz 〉 Tibet- an 〉 Xiaoweihan sheep. [Conclusion]The 8 EAA(Thr, Val, Met, Ile, Leu, Phe, Lye, His, Ary)required by human body are contained and abundant in lamb, especially the Met and Lys which are up to 0.67%/100 g, 1.60%/100 g, respectively. This proves that mutton can be regarded as the main resource for human be- ings to obtain amino acids.
