摘 要:饮食是人们基本的生活需求,其理念、习俗既是构成中国人日常生活的一个要素,也是考察中国文化传统的重要内容。其理念、习俗中的"人道"与"物道"之争,反映中西方文化差异。国人善于综合利用餐饮原料,但"食不厌精、脍不厌细"习俗当予批判,当今的餐饮企业应从传统的饮食文化中汲取精华,摈弃糟粕。Diet is the basic need of life. Its concepts and customs not only constitute an element ot the Chinese people' s daily life but also serve an important material for the study of Chinese traditional culture. The clash between"humanity" and" Material orientation" in dietary concepts and customs reflects the differences of Chinese and Western culture. Chinese people do well in comprehensive utilization of food raw materials. But criticism should be given to the custom of "no objection to his rice being of the finest quality, nor to his meat being finely minced. " Catering industry today might discard the dross and assimilate the essence of tradi- tional culinary culture,.
