脱皮马勃复配保鲜剂在卤制品中的应用

摘　　要：采用脱皮马勃子实体浸提物与羧甲基壳聚糖复配制作卤制品生物保鲜剂,研究其在卤制品中的应用。结果表明,0.1%羧甲基壳聚糖+0.1%脱皮马勃复配使用,可以在冷藏条件下使散装卤制品由4 d延长至7 d,具有良好的推广应用前景。Using fruitbody extract in Lasiosphaera fenzlii Reich.and carboxymethyl chitosan to product halogen products biological antistaling agent,its application in halogen products was studied.The result showed that in the frozen condition,compound using 0.1% carboxymethyl chitosan＋0.1% Lasiosphaera fenzlii Reich.could make the bulk of halogen products prolong from 4 days to 7 days,had a good application prospect of promotion.
