摘 要:用最简单方法——三维荧光光谱法对食用调和油中掺入的少量的地沟油进行了检测,并取得了成功。通过实验得出以下结论:当加入地沟油的体积比超过5%时,在Ex=310nm,Em=345nm处相对荧光强度迅速下降至2533,与新鲜调和油相比,荧光强度下降了2872,由此可以作为调和油中是否掺入地沟油的判据。实验证明,该方法灵敏、稳定,适合于调和油中掺杂少量地沟油的测定。The three-dimensional fluorescence spectrometry was used to detect a spot of illegal cooking oil mixed in blend oil, which was proved successful. Through the experiment, conclusions were obtained as follows:when volume ratio of added illegal cooking oil exceeded 5 %, relative fluorescence intensity decreased to 2533 in Ex= 310nm, Em= 345nm, and relative fluorescence intensity fell by 2872 comparing with fresh blend oil, that could be a criterion to confirm whether a blend oil mixed with illegal cooking oil. This method is sensitive and stable, and suitable for detection little illegal cooking oil mixed with blend oil.
