摘 要:针对从甜玉米胚乳获得一种新型葡聚糖,采用Zeta电位/粒径仪、傅立叶红外光谱仪、高效液相色谱、体外模拟消化等现代分析方法来测定其结构参数与功能性质。研究结果表明,该类葡聚糖溶于水,其颗粒尺寸在30~100nm范围内,属于典型的纳米微粒,具有伯醇、仲醇羟基的α-D-吡喃环等类似于淀粉空间结构的特征,其分子量分布呈单一峰,重均分子量为1483250,聚合度DP为9155.9,在体外模拟消化条件下其生物降解速率远低于蜡质玉米淀粉。The structure and properties of water-soluble glucan from mutant maize endosperm were investigated through Zetasizer Nano, high performance liquid chromotagraphy ( HPLC), infrared spectrum (IR) and other modern analytical methods.Results showed that the particle sizes of the glucan were ranged from 30-100nm.The structure of water-soluble glucan which had co-D-pyranose ring structure with hydroxyl group of primary alcohol and secondary alcohol were analogous to that of starch.Plot of molecular weight distribution had a single peak.The weight-average molecular weight was 1483250, while the degree of polymerization was 9155.9. The amount of glucose released from water-soluble glucan was lower obviously than that from waxy corn starch(WCS).
