摘  要:银耳产品的水分指标,不仅关系到银耳产品的安全,而且关系到银耳产业乃至古田食用菌产业的发展。本文从实验论证、查阅国内食用菌标准的水分指标、对市场销售银耳水分总体情况进行摸底等三方面对银耳卫生标准中有关水分指标问题进行分析。Water ratio index of dried tremeUa is important to not only its food safety issue, but also the industry itself and its development in Gutian county, Fujian province. This essay is to state the water ratio index concerned in the Tremella Hygienic Standard from the three aspects, that is the experimental proofs, the inquiry of the Standards of Water Ratio Index for Edible Fungi at home and the situations of tremeUa real water ratio in the marketing.
