非物质文化遗产视角下江苏传统制茶技术考证及价值探讨

摘　　要：江苏传统制茶技术历史悠久、类型多样,具代表性的有唐代宜兴阳羡茶制作技术、元代宜兴金字末茶制作技术、明代宜兴岕茶制作技术、清代苏州洞庭山碧螺春茶制作技术、近代连云港云雾茶制作技术、当代南京雨花茶制作技术。从非物质文化遗产的角度来看,江苏传统制茶技术的价值主要体现在传承和应用两个方面。传承价值包括地域文化传承和历史文化传承,应用价值表现为促进当代茶叶生产和旅游开发。Jiangsu has a long history and varied types of traditional tea production techniques including Yixing Yangxian tea production technique in Tang Dynasty, Yixing Jinzimo tea production technique in Yuan Dynasty, Yixing Jie tea production technique in Ming Dynasty, Suzhou Biluochun tea production technique in Qing Dynasty, Lianyungang Yunwu tea production technique in modem and Nanjing Yuhua tea production technique in contemporary. In perspective of the intangible cultural heritage, the value of Jiangsu traditional tea production technique mainly embodies in the inheritance and application. The heritage value includes the regional culture and historical culture, the use value includes promoting tea production in contemporary and tourism development.
