摘　　要：叶黄素广泛存在于自然界中,属于类胡萝卜素中的一种,是一种安全的天然色素。由于具有多种生物活性,应用前景十分广阔。介绍了近年来叶黄素的制备方法及生物活性研究进展,为叶黄素的进一步研究提供了参考。Lutein is one of the carotenoids which exist widely in the nature. It is a kind of safe pigment. Be- cause of the variety of biological activity,lutein has a wide application prospect in the future. The research pro- gress in preparation and biological activity of lutein were introduced,in order to provide the reference for its fur- ther study.
