摘  要:采用酸性蛋白酶浸泡法和碱液浸泡法从糜子籽粒中提取淀粉。通过单因素试验确定酶法最佳提取工艺条件为:pH4.0,酸性蛋白酶体积分数2%,浸泡时间10h,浸泡温度50℃,此条件下淀粉提取率为70.12%。碱法最佳提取工艺条件为:pH11.0,料液比1∶5,浸泡时间8h,浸泡温度25℃,此条件下淀粉提取率为81.59%。The acidic protease and alkaline method were used to extract starch from proso millet. The optimal extraction con- ditions of enzymolysis and alkaline were gained by single experiments. The optimal enzymatic extraction conditions were as fol- lows: pH4.0,acidic protease content of 2% (v/v), time of 10 h and temperature of 50℃. Under this optimal condition, the yield of starch was about 70.12%. The optimal alkaline isolation conditions were as follows., pHll. 0, solid-to-liquid ratio of 1 : 5, time of 8 h, and temperature of 25~C. Under this optimal condition, the yield of starch was about 81.59%.
