摘  要:对体质量500~600g的野生中华鳖(Trionyxsinensis)和仿自然水体养殖中华鳖(下称仿生鳖)的腿部肌肉、裙边及肝脏组织的营养成分进行比较分析。结果表明:野生鳖肝脏中粗蛋白、水分、粗灰分含量显著高于仿生鳖(P〈0.05),而粗脂肪含量显著低于仿生鳖(P〈0.05);野生鳖和仿生鳖肌肉和裙边中半必需氨基酸、非必需氨基酸、总氨基酸含量和鲜味氨基酸总量无显著差异(P〉0.05),仿生鳖裙边中必需氨基酸含量显著高于野生鳖(P〈0.05);野生鳖肌肉共测出32种脂肪酸,仿生鳖肌肉共测出25种脂肪酸,野生鳖的多不饱和脂肪酸含量显著高于仿生鳖(P〈0.05)。A series of trials were conducted to compare the nutrients in muscle, soft apron, liver of wild and imitate cultured Chinese soft-shelled turtles (Trionyx sinensis ) (weight 500 - 600 g ). The results indicated that the content of crude protein, moisture and crude ash in livers of wild Chinese soft-shelled turtles were higher than that of imitate cultured turtles (p 〈 0.05), but the content of crude fat were lower than that of imitate cultured turtles (p 〈 0.05). There were no significant difference in Semi- essential amino acids (SEAA), non- essential amino acids (NEAA), total amino acids (TAA) and flavour amino acid (FAA) in muscle and soft apron between wild and imitate turtles (p 〉 0.05),but the content of essential amino acids (EAA) in soft apron of the wild turtles were higher than that of mitate cultured turtles. The wild turtles had higher poly unsaturated fatty acid (PUFA) content in soft apron compared to that in imitate cultured ones.
