摘 要:研究了糖化酶水解大豆异黄酮的技术工艺,利用糖化酶水解大豆异黄酮粉得到大豆异黄酮苷元。通过单因素试验对水解过程中的不同影响因素进行考察,运用正交试验优化了糖化酶水解大豆异黄酮的反应条件,优化结果为:水解温度55℃,pH值4.8,时间7 h,水解率可达98.18%。The technique of hydrolysis of soybean isoflavones by saccharifying enzyme was studied in this paper. The soybean isoflavone aglycon was obtained by hydrolysis. The different factors influencing the process of enzyme hy- drolysis were studied through single factor tests. Reaction conditions of hydrolysis by saecharifying enzyme were optimized through orthogonal test. The results showed that the optimal hydrolysis conditions were as follows: the temperature was 55℃ , the pH value was 4.8 and the time was 7 hours. The hydrolysis ratio could reach 98.18%.
