单环刺螠体壁氨基酸组分与含量的分析

摘　　要：单环刺螠体壁肌含有１８种氨基酸（其总量占体壁肌干重的５７．３９％）。其中，８种人体必需氨基酸含量 １７．７９％。５种鲜味氨基酸（Ｇｉｎ，Ａｓｐ，Ａｒｇ，Ａｌａ，Ｇｌｙ）含量都比较高。必需氨基酸含量组成模式与人体需要模式较接 近。支／芳值高达２．５９。There are 18 sort amino acids in bodywell muscle of Urechis unicinctus (content 57. 39 % ), and 17. 79 per cent of them are 8 sort essential amino acids. The content of 5 sort fresh flavor amino acids (Glu, Asp, Arg, Ala, Gly ) has all relatively high. The ratio of branched chain amino acid and aromitic amino acid of Urechis unicinctus approaches the ratio of mornal man.
