摘 要:对ABTS法与邻二氮菲-Fe3+法测定保健食品抗氧化能力的性能进行分析比较。提取样品中抗氧化成分,以水溶性VE(Trolox)为标准,分别用ABTS法和邻二氮菲-Fe3+测定样品的抗氧化能力值。通过对两种方法线性关系,最低检测线,精密度,准确度等指标进行测定,对两种方法进行分析比较。两种方法的平行性,重复性精密度及加标回收率均没有显著差异;ABTS法检测Trolox的灵敏度比邻二氮菲-Fe3+法高一个数量级。ABTS法更适用于水溶性抗氧化混合物的测定,当样品中含有还原电位比Fe3+低的抗氧化成份时,用ABTS法比邻二氮菲-Fe3+法测定的结果更准确。The performances of methods of ABTS and 1,10-2 phenanthroline-Fe^3+ in determining the antioxidant capacity of water-soluble compounds in functional food was compared. The hydrophilic antioxidants in functional foods were extracted and the antioxidant capacity was detected by 2 methods, and the results were expressed by Trolox-equivalent. The accuracy, linearity, repeatability, recovery rate and limit of detection (LOD) of the 2 methods were studied, and their feasibilities were also verified. Each of the 2 methods showed a good linearity over the Trolox concentration of 0.025-0.4 μmol/L (R^2=l). The reliability, repeatability and recovery were no differences between the 2 methods. But the method of ABTS reached a lower LOD than the other method. ABTS method is more suitable for the determination the antioxidant capacity of water-soluble antioxidant mixture.
