摘 要:目的了解乳山市食(饮)具消毒状况,为进一步规范餐饮服务单位卫生监督管理提供科学依据。方法 2012年1—8月,采用大肠菌群快速检测纸片法对乳山市423家餐饮服务场所消毒后备用的食(饮)具进行检测。结果调查423家餐饮服务单位,合格的309家,合格率为73.05%;检测食(饮)具3 666份,合格3 124份,合格率为85.21%。食(饮)具消毒合格率:学校食堂为84.75%,市区饭店为75.92%,乡镇、农村饭店为65.43%,农村聚餐场所为52.63%(P<0.01)。集中消毒的合格率为90.86%,自行消毒的为70.08%(P<0.01);各类食(饮)具消毒合格率:盘子为88.05%,汤匙为87.09%,碗为85.08%,杯子为84.11%,筷子为74.85%。结论乳山市食(饮)具总体消毒合格率较低。应加强乡镇、农村饭店特别是农村聚餐场所食品安全监督管理,提倡使用餐饮具集中消毒单位配送的食(饮)具。[ Objective] To understand the disinfection status of tableware in Rushan City, and provide scientific evidence for further standardization of health supervision and management. [ Methods ] From January-August 2012, rapid coliform test paper method was adopted to detect tableware after disinfection in 423 catering units of Rushan City. [ Results] Of 423 catering units, 309 were qualified with the qualified rate of 73.05%. A total of 3 666 pieces of tableware were detected, 3 124 were qualified, with the qualified rate of 85.21%. The disinfection rate of tableware in school canteens, urban hotel, township and rural hotel, rural gath-ering place was 84.75%, 75.92%, 65.43%, 52.63% (P 〈 0. 01). The qualified rate of tableware with concentrated disinfection and tableware with self-disinfection was 90.86% and 70.08%, respectively ( P 〈 0.01 ). The disinfection rate of plate, spoon, bowl, cups, chopsticks was 88.05%, 87.09%, 85.08%, 84.11% , 74.85%, respectively. [ Conclusion ] The overall qualified rate of tableware is relatively low in Rushan City. It is necessary to strengthen food safety supervision and management in township and rural hotel, especially in rural gathering place, to promote the use of tableware disinfected in central sterilization units.
